Smoked Salmon Blinis

Carrying on the Christmas theme, here's a great recipe for smoked salmon blinis. These make a great canapé dish and you wouldn't know they were low carb! They can be made the day before and then assembled when required.

RECIPE
Makes about 30 small Blinis
Blini Ingredients:
2 Eggs
3 Tablespoons Cream Cheese
2/3 Cup Almond Flour
1 Heaped Teaspoon Baking Powder
30ml (2 Tablespoons) Water
Chopped Chives (optional)
Salt & Pepper
Topping:
250g of Crème Fraîche
Chopped Chives - around 1/4 cup
Zest and juice of a lemon
Salt & Pepper
Hot Smoked Salmon
Method:

1. Heat a frying pan on a medium heat. We used butter to cook these in. You could use ghee or coconut oil.
2. Place all ingredients in a blender or use a stick mixer and blend together. (The mixture is quite runny)
3. Let sit for a couple of minutes to bind together
4. Pour small amounts into the pan (around a tablespoon per blini). We found a squeezy bottle with a nozzle is the best way to dispense the batter!
5. When bubbles form, flip the blinis over and cook the other side
6. Cool on a rack. These can be stored in the fridge and used the next day if needed.
7. Mix together the crème fraîche, lemon, chives and salt & pepper
8. Top each blini with the crème fraîche mixture and a small piece of salmon
